    1.The glucose is reduced to form sorbitol , The xylose is reduced to form sorbitol , The maltose is reduced to form maltitol , The fructose is reduced to form mannitol

     

    2. Classification: Common sugar alcohols include xylitol, erythritol, sorbitol and maltitol. Sorbitol and maltitol are most widely uesd in food industry.

     

    3.Advantages: low sweetness, does not cause dental caries, does not affect blood sugar value, high acid heat stability.
